It’s half term break here in Dubai. Kids are at home and they have a busy schedule than the moms. They got loads of homework and lots of play time on their hands. Those who are yet to go to school have lot of exploring , playing and they need to grow up very fast and healthy! I have the combination at home and I am really blessed for these two cute gifts from life!
We get stuck when it comes to healthy breakfast for kids . The popular choices are pancakes, cereal and bread toast with a fruit juice on the side. As the sail upstream lady I cannot settle for any of that. In fact I have none of that in my home unless if there is a long pending special request.
Here is one of my very successful inventions approved by toddler and school kid for breakfast!
Avocado Mousse
Ingredients :
Half an avocado
(School kid) handful of Pecans soaked for 12 hours
Half a ripe banana
Two dates
Chia seeds
Freshly made coconut Milk
Method:
Put them all together and run the stick blender several times (can it get any easier ? suggestions please! )

This breakfast is brimming with nutrition and zero unhealthy stuff. It has protein , healthy fats, carbs, minerals and a whole host of other nutrients for the busy bodies . This is a great breakfast idea for anyone sans the banana. In fact I feel this is the king of all breakfasts!
I buy the organic banana and let them ripe on the counter and then cut them in half and wrap them in parchment paper and toss them in the freezer. I pick a half and put it in the fridge the previous night. When the banana peel gets the brown spots it is very ripe and the bio availability of the nutrients are greater.
Raw coconut milk is made everyday in my house. I get the noir de coco from Lulu hyper market (they have good round coconuts from Sri Lanka) and grate it on a coconut grater I got from Sri Lanka. Then I place the coconut meat in the blender pour warm water (little or more depending on the thickness of the milk you need) and pulse it several times. Then strain the milk through a fine mesh sieve. Voila you have healthy milk for any recipe.
I know busy moms can appreciate this super easy yet healthy idea. It can be eaten as a snack or as a dessert too.

Thank you for this amazing recipe. However, could you please include alternative ingredients that we can use as some of these ingredients are quite difficult to find in South Asian countries. Anyway, thank you for this blog, it is really helpful.
ReplyDeleteThanks Niraj for your comment and appreciation. I think it's difficult to find chia seeds, I agree. Would you be able to find hemp or flax seeds as an alternative ? You can up on the nuts or add high quality whey protein . The easiest would be extra virgin coconut oil to up the energy boost. A table spoon may be.
