A breakfast fit for a king!!

It’s half term break here in Dubai. Kids are at home and they have a busy schedule than the moms. They got loads of homework and lots of play time on their hands. Those who are yet to go to school have lot of exploring , playing and they need to grow up very fast and healthy! I have the combination at home and I am really blessed for these two cute gifts from life!

We get stuck when it comes to healthy breakfast for kids . The popular choices are pancakes, cereal and bread toast with a fruit juice on the side. As the sail upstream lady I cannot settle for any of that. In fact I have none of that in my home unless if there is a long pending special request.

Here is one of my very successful inventions approved by toddler and school kid for breakfast!

Avocado Mousse

Ingredients :

Half an avocado

(School kid) handful of Pecans soaked for 12 hours

Half a ripe banana

Two dates

Chia seeds

Freshly made coconut Milk

Method:

Put them all together and run the stick blender several times (can it get any easier ? suggestions please! )

Why is this the big deal!

Well the topper is that it is express on the go breakfast for the whole family mom , dad and the kids!

This breakfast is brimming with nutrition and zero unhealthy stuff. It has protein , healthy fats, carbs, minerals and a whole host of other nutrients for the busy bodies . This is a great breakfast idea for anyone sans the banana. In fact I feel this is the king of all breakfasts!

I buy the organic banana and let them ripe on the counter and then cut them in half and wrap them in parchment paper and toss them in the freezer. I pick a half and put it in the fridge the previous night. When the banana peel gets the brown spots it is very ripe and the bio availability of the nutrients are greater.

Raw coconut milk is made everyday in my house. I get the noir de coco from Lulu hyper market (they have good round coconuts from Sri Lanka) and grate it on a coconut grater I got from Sri Lanka. Then I place the coconut meat in the blender pour warm water (little or more depending on the thickness of the milk you need) and pulse it several times. Then strain the milk through a fine mesh sieve. Voila you have healthy milk for any recipe.

I know busy moms can appreciate this super easy yet healthy idea. It can be eaten as a snack or as a dessert too.

Happy gobbling up !!!

  1. Thank you for this amazing recipe. However, could you please include alternative ingredients that we can use as some of these ingredients are quite difficult to find in South Asian countries. Anyway, thank you for this blog, it is really helpful.

    1. Thanks Niraj for your comment and appreciation. I think it's difficult to find chia seeds, I agree. Would you be able to find hemp or flax seeds as an alternative ? You can up on the nuts or add high quality whey protein . The easiest would be extra virgin coconut oil to up the energy boost. A table spoon may be.

Why NO2 Dump Exercise is the best for working moms - Four amazing reasons

Developed by Dr. Zach Bush and perfected by Dr. Mercola NO2 Dump is my favourite exercise. Oh yeah!  Did I tell you that I met my husband at a gym? Tweny three years ago we both pumped at a gym called Power World in downtown Colombo, that's where we bumped in to each other! Before we became parents, especially parents of three children, we regularly went to the gym. Thirteen years ago when I got pregnant with Jenara I quit exercising at the gym.I went back time to time but it was not a priority for me anymore. I have changed from being a super fit workohilic to a working mom.  When I came across Nitric Oxide Dump Exercise, I was delighted !  It is the most amazing thing after coffee. Here are the reasons why working moms should love Nitric Oxide Dump; As a health-conscious mom, this is one of the best things that happened to me . I am not guilty of not being there for the family. I spend quality time with my kids, cook great meals, work and I get to exercise every single...

A day in the life of a VERY pregnant , health coach , full time working mother!

Hello there my beloved readers…Its been a while I blogged. I thought I need to blog again because  lots of my coaching clients wants to know what to eat and how to find time to exercise and move and so much more. I want to lead by example and for the benefit of my clients and my readers I will write a blog about my DAY. I have 24 hours just like everyone else and I juggle work, home duties, a toddler , a super busy eight year old and my coaching clients.  Today is a blessed day not just because it is Eid and the beginning of long weekend for us Dubai dwellers. But the much awaited opening of the swimming pool has happened. Ok we were planning to go to pool by 6 in the morning but we overslept!!! I dragged myself out of the bed because JJ woke up suddenly screaming “we are late to go to the pool"!!!! OK, now everyone is fully awake with that shrieking even Linuk. I drank my 500ml water and finished my bathroom duties and start ordering everyone around. I ate a slice o...
