Chop Suey loaded Quinoa cups!

Here I am, after a week of silent contemplation on what to post next!

I though of sharing a recipe with you each week starting from today.

I experiment with food a lot. I love to eat and sometimes I find the things that I love most are unhealthy. So I went on to create the healthy versions of food that we all love. Eating healthy nutritious food is fun at my home.


Chop Suey loaded Quinoa cups

Ingredients 

Quinoa

Sugar snap peas
Pak choy
Bell pepper
Asparagus
Shiitake Mushrooms
Home made stock or certified organic stock powder 
Fresh ginger garlic paste
Organic virgin Coconut Oil
Organic Sesame oil 0.5 table spoon
Tamari sauce or coconut amino
Arrowroot powder
salt and pepper to taste 
Sesame seeds 

How to cook:

Cook the quinoa as per package instructions.

In a large wok heat coconut oil and sauté the ginger garlic mix until golden brown and emits a lovely aroma. Add the veggies and sauté until the water oozes from the vegetables. I add mushrooms first let it cook and then add the sugar snap peas, asparagus , bell pepper and last the pak choy. Add the stock powder , tamari sauce or coconut amainos and sesame oil. Mix arrowroot powder (start with tea spoon of powder) in water or stock and add to the wok. This is the healthy thickener in place of corn flour. Mix everything cook two minutes. Drizzle some organic sesame seeds.Now the aroma of this lovely healthy dish will fill your kitchen.

Serve hot quinoa in a bowl topped with Lemali's own version of chop Suey.

A breakfast fit for a king!!

It’s half term break here in Dubai. Kids are at home and they have a busy schedule than the moms. They got loads of homework and lots of play time on their hands. Those who are yet to go to school have lot of exploring , playing and they need to grow up very fast and healthy!
